Courgette and pepper soup

Here at SRSLY HQ we're proud to announce the first of many SRSLY awesome low carb recipes from our new friend, John 'Ronnie' Jennings.

You will need 1 large courgette, 1 red onion, 4 garlic cloves, 1tsp of dried thyme, a handful of fresh parsley, 1 roasted pepper with skin removed (or a jar of red peppers already prepared), 1/3 of a Loaf of Seeded SRSLY Low Carb Bread, 200ml of vegetable stock, 30g butter & 30ml olive oil.


1. Chop courgette red onion and put in a roasting pan with 2 whole cloves of garlic sprinkle with salt thyme and splash of oil and roast in a preheated oven for 20mins

2. Whilst that is roasting cut 1/3 of loaf into cubes and add to a roasting tin

3. Melt the butter with 1 crushed clove of garlic and melt in microwave for 40 secs

4. Pour the melted butter over the bread and add the olive oil and roast for 15 mins

5. Take the roasted courgettes out of the oven and place in a food processor or nutri bullet and add the red pepper stock and parsley and blitz. Add salt and pepper to taste.

Serve in a bowl with croutons and cheese (optional but definitely recommended)
