Ingredients
Dry ingredients
- 2 teaspoons of ground cinnamon
- 1/4 teaspoon of ground nutmeg
- 1/4 teaspoon of ground ginger
- 1/4 teaspoon of ground allspice
- 112g seriously low carb almond flour
- 70g seriously low carb coconut flour
- 4 tablespoons seriously low carb erythritol
- 1/4 teaspoon of bicarbonate of soda
- 1/4 teaspoon of baking powder
- 1/4 teaspoon of seriously low carb xanthan gum
- Pinch of salt
Wet ingredients
- 60g browned unsalted butter
- 1 teaspoon of vanilla extract
- 1 egg white whisked"

Method
- Put all the dry ingredients into a food processor and blend together until well combined
- Place unsalted butter in a saucepan and gently brown over a low heat add vanilla and set aside to cool
- Whisk egg white in a bowl untill it forms stiff peaks (this gives the biscuit snap)
- Pour butter onto dry ingredients and pulse until it resembles crumbs then add the whisked egg white an pulse until just forming a dough
- Empty onto clingfilm and knead into a smooth dough then pat into a brick shape, wrap and place in the freezer for 45minutes
- Remove from freezer and slice into 20 equal sized biscuits, you can use a fork to make a pattern around the edge
- Place in the fridge while you heat the oven to 150c then bake for aprox 25 minutes
- Remove from the oven, cool and enjoy
