  • 570ml semi skimmed milk
  • 50g salted butter
  • 1 large onion
  • 6-12 whole cloves
  • 6 whole peppercorns
  • 2 garlic cloves
  • 1 bay leaf
  • 3 fresh thyme sprigs
  • 140g Seriously Low Carb Loaf breadcrumbs
  • 60ml single cream

  1. Slice the onion in half and stick the cloves into the onion.
  2. Pop the onion, peppercorns, garlic cloves, bay leaf and thyme sprigs into a pan with the milk and bring everything to the boil.
  3. As soon as the milk begins to boil, take the pan off the heat and put a lid on it. Leave the pan in a warm place to infuse for 2 or more hours.
  4. When you're ready to make the sauce, pour the milk through a sieve to remove the onion, herbs and spices. Pop the infused milk back in to a pan.
  5. Make the breadcrumbs by slicing the crusts off your Seriously Low Carb Loaf slices and then blitzing them in a food processor until they become breadcrumbs. The finer you chop them, the smoother your sauce will be.
  6. Stir the breadcrumbs into the milk, add 25g of butter and place on a low heat, stirring occasionally until the sauce has thickened - usually about 15 minutes. Make sure the sauce is just warming through - if it gets too hot and starts to bubble, the sauce may split.
  7. Once the sauce has thickened, stir in the remaining butter and cream, and beat until smooth. Serve.
