Ingredients
- 570ml semi skimmed milk
- 50g salted butter
- 1 large onion
- 6-12 whole cloves
- 6 whole peppercorns
- 2 garlic cloves
- 1 bay leaf
- 3 fresh thyme sprigs
- 140g Seriously Low Carb Loaf breadcrumbs
- 60ml single cream
Method
- Slice the onion in half and stick the cloves into the onion.
- Pop the onion, peppercorns, garlic cloves, bay leaf and thyme sprigs into a pan with the milk and bring everything to the boil.
- As soon as the milk begins to boil, take the pan off the heat and put a lid on it. Leave the pan in a warm place to infuse for 2 or more hours.
- When you're ready to make the sauce, pour the milk through a sieve to remove the onion, herbs and spices. Pop the infused milk back in to a pan.
- Make the breadcrumbs by slicing the crusts off your Seriously Low Carb Loaf slices and then blitzing them in a food processor until they become breadcrumbs. The finer you chop them, the smoother your sauce will be.
- Stir the breadcrumbs into the milk, add 25g of butter and place on a low heat, stirring occasionally until the sauce has thickened - usually about 15 minutes. Make sure the sauce is just warming through - if it gets too hot and starts to bubble, the sauce may split.
- Once the sauce has thickened, stir in the remaining butter and cream, and beat until smooth. Serve.
